Adjust pacing and availability to optimize your dining room and offer reservation times that will allow for the most turns on each table every shift. ## **Understanding Turn Times**

Turn times are based off the average time a party size is expected to dine at your establishment. The **‘Timing Report’** will assist in making better adjustments to your turn times as you accurately update reservation statuses to ‘Done’.

* Consider the flow of your menu and your BOH timing. It is in good practice to allot more time than less to ensure your bookings do not overlap
* Turn times contribute to reservation availability and ensure that multiple reservations cannot be booked at the same time on the same table. For example, if a party of 2 has booked for 5:00pm and your turn time is set to 1.5 hours, the next available booking will be at 6:30pm (dependent on pacing – see pacing)

**Under ‘Analytics’, the ‘Timing Report’ shows your average turn times and waitlist stats.** Turn times are indicated for all parties sizes every day and service of the week.

* Turn Time is defined as the time from when guest status is changed to ‘Seated’ to when guest status is changed to ‘Finished’
* Guest statuses that are never updated to ‘Finished’, or statuses that are changed to ‘Finished’ after longer than four hours, have been excluded from this calculation

## **Pacing**

**Regulate the covers you want to drive for each time increment during your shift with your pacing:**

1. In the ‘Shift Editor’ you’ll find your pacing settings in ‘Step 2 Service Settings’.
2. By default, your pacing will be set to 10 covers every 15 minutes from the shift _start time_ to the event _end time._
3. Set the X amount of covers per seating time. This will be the max amount of covers/guests you can allow per 15 minutes.
4. You can customize different max covers per specific increment by clicking "Customize Intervals" or "Customize Pacing by Floor Plan" and manually editing each increment.

## **Availability**

**Editing Your Table Availability to optimize your seating**

1. In the 'Shift Editor', you'll find your availability settings in "Step 3 Availability".

**Please note:** By default, all your tables will be set to online, and you can adjust by table type from the main view.

2. You'll want to edit your availability so that only the tables you want booked online by guests are set to online. Any tables you'd like set for in-house booking or walk-in only need to be set accordingly.
3. Tables set to online will automatically sync with your set pacing (from above) so that guests cannot book over your set pacing limit.
4. In-house tables can be booked above pacing as they are managed internally by you, so if you don't ever want to exceed pacing limits in house, set a number of tables as walk-in only.
5. Complete by clicking 'Update Availability' and then "Update Shift".

For example, I set the bar to walk-in only and the rest of the floorplans and tables as online for guests to book:
